Cutting Methods

The size and orientation of chicken pieces affects cooking evenness and final moisture content. Uniform thickness ensures consistent heat exposure and prevents simultaneous overcooking of thinner sections while thicker areas remain undercooked. Cutting against the grain reduces fiber length, creating a more tender texture that retains marinades more effectively.
