This Spinach Pesto is my favorite alternative to traditional basil pesto. Basil pesto requires so much basil and it can get expensive! Spinach goes a much longer way and gives you that same vibrant, fresh flavor.
It’s not just for pasta! I use this as a creamy dip, a spread for bread, or even a sandwich spread to level up lunches. It stays perfect in the fridge for a few days, and it’s freezer-friendly, so you can always have a healthy sauce ready to go.
Ingredients: 1 lb Spaghetti 10 oz Fresh Spinach Handful of Fresh Basil 1 cup Parmigiano Reggiano, grated 1 Garlic clove 2 tbsp Pine nuts Squeeze of Lemon 1/4 cup Olive Oil (add more if needed) 2-3 Ice cubes Salt and Pepper
